A true “Southern Style” seasoning. It has a relatively high level of sage, red pepper and black pepper. It’s our most popular variety by far and is a staple at the breakfast table. Enjoy it on a front porch watching the sunrise for its maximum flavor potential.
The easiest way to cook loose sausage is to crumble it up into a hot pan and cook on high until golden brown. Use this sausage for a breakfast omelet / hash, or your whatever your heart desires. Don't be afraid to mix it with a little ground beef for a super savory burger.
We grab our sausage from a number of different places on the hog. The first off is "trim" - which is a term used for the trimmings on more select cuts like chops and bacon. After that we grab some fat from the hogs back - and then add in shoulder, picnic, ham, cheek, and shank!
