Ingredients

One Whole Chicken
Santa Maria Seasoning 3 TBS
Oil 2 TBS
Butter 2 TBS
Onion 1 Cup
Carrot 1 Cup
Garlic 4-5 cloves
Potato 2 Cups
Thyme 1.5 TSP
Rosemary 1.5 TSP 

Preheat oven to 400*

Once you have all your ingredients washed and ready to go you can begin by taking a paper towel and patting dry your whole chicken and place on cutting board breast side down.  Taking your kitchen scissors(if you don't have any I highly recommend getting some)from the neck cut along the backside of the chicken, the chicken should now lay flat on the cutting board, at this time you have 2 option. the first is to leave the chicken as is, the second is to cut between the two breasts splitting the chicken into two halves.  I prefer the second, but either way works just fine.  Now take your oil of choice(leave a little for the veg later) and rub the entire chicken, this will help the seasoning to stick better and help the browning of the skin,  After the oil has been rubbed on the chicken, evenly sprinkle the Santa Maria seasoning all over the bird.  Set the bird aside, clean your work station and get ready to prep the veg.  When preparing the vegetable to be roasted we want to make sure that the size of the cut/prepared veg is similar in size.  this will ensure that it all cooks the same. we don't want overcooked or undercooked vegetable.  So, let's get to cutting our vegetable.  I recommend a medium to large dice for roasting veg.  3/4 in dice will be fine.  Take the remaining oil, a pinch of salt and pepper and gently toss them with veggies in a bowl, set aside.  Start to preheat your cast iron skillet on medium-high heat. Once the pan is hot, add butter and let it melt (this will happen fast so be ready) and place chicken in pan skin side down.  turn the heat down to medium. Allow skin to brown, if it is getting too dark to fast turn the chicken over and let it cook on the other side for 2-3 minutes and then return to skin side down to continue to brown.  Browning should take 8-10 min.  once done remove chicken from pan and place seasoned veggies into pan, stirring for a moment to introduce the chicken flavor to all the veggies.  Sprinkle the veggies with herbs and return the chicken to the pan, skin side up, and place in oven.  There is no way for me to tell you how long it will take for the chicken to be done.  I don't know how big your chicken is, how much it cooked during the browning, what temperature the chicken was at when you placed it in the oven, with all that being said, it should be around 30 min, but you should check with a thermometer. 165* internal temperature is health department standard.  Once your chicken reaches that temperature you are almost ready to eat.  Take it out of the oven and let sit for about 10 min.  Let the Bird rest and let those juices flow back into the chicken.  Grab a beer, glass of wine, or whiskey, pat your self on the back, say grace and give thanks and enjoy the wonderful meal.
